hello everyone! Here are a few of the recipes that are listed in my 6 week meal plan! Enjoy!
Before I get to my mothers spaghetti recipe, I found this recipe that is similar from Lemons for LuLu; she added sausage, which I thought was a fantastic idea! And so thought I would share it with you!
And now, I am going to share my all time favorite spaghetti recipe. It is from my beloved mother, whom is called “QUEENIE” by my children ❤
YUM!!! It is super easy too!
you will need:
- 1# hamburger
- 1 med onion chopped
- 1 LG container of PREGO sauce
- Garlic salt to taste
- Pepper to taste
- Oregano to taste
- Basil to taste
- Italian Seasoning to taste
- Fresh Chopped Garlic (about 2-3 cloves)
Add all the ingredients (except for the tomato sauce) to skillet with hamburger and cook until done. Transfer to crockpot, add tomato sauce, and simmer all day (3-6 hrs)! Cook noodles in a separate pot and enjoy! ** I have also heard of people putting the noodles in the crockpot! I haven’t tried it, but it seems to work well for others!
tip: if I have extra veggies in the fridge that need to be used up, I will shred them or chop them up really small and add them into the meal as well. The kids cant tell and it still tastes so yummy! (ex: carrots, sweet potato, zucchini, mushrooms, olives, tomatoes, etc) Just throw it in with the meat as you cook it, or toss it in the crockpot with the sauce and it will slowly cook all day! enjoy!
(note that the grocery shopping list in my 6 week plan reflects my mothers recipe!)
Tortellini Crockpot Soup

- 1 bag of frozen tortellini
- 1 small bag of fresh spinach
- 1 pound of mild Italian sausage; casings removed
- 2 cans of italian style diced tomatoes
- 1 box or 4 cups or vegetable broth
- 1 block of cream cheese
Cook sausage then put all ingredients in crockpot; chunking up the cream cheese. Cook on low for 5-6 hrs. SCRUMPTIOUS!
Lazy Day Stew

Here is another easy recipe for Lazy Day stew as well!!! (this one is based off the grocery list for my 6 week meal plan) But feel free to use either!! yum yum!
Tortilla Taco Salad
Here is another great and super easy recipe!
Eat Cake For Dinner has this super awesome Café Rio copy-cat recipe for a taco salad. Mine is extremely similar. Feel free to use either one! (my grocery list reflects my recipe!)
Flour tortillas (I like to use the uncooked ones found in the refrigerated area by the cheese)
Cheddar Cheese, shredded
Depending on time, I either make some jasmine white rice on the stove or I use the microwavable 90 second rice packs.
1 can black or pinto beans, rinsed and drained
chopped lettuce or spinach- whatever ypou have in the house
(optional) crunchy corn strips (I cut a few corn tortillas into strips and fried them in a little bit of vegetable oil until crispy)
rotisserie chicken or hamburger meat – again whatever you have in the house (or optional)
spring of cilantro, for garnish
ranch or zesty Italian dressing
Place flour tortillas on skillet or griddle. cook both sides, only takes about 60 seconds (follow instructions on packaging). Add your meat, beans and rice on top. Next add lettuce, cheese, and tomatoes. Top with salad dressing of your choice and some cilantro! Enjoy!
Sausage Pasta with Broccoli Rabe

This meal is SUPER YUMMY!!! It is one of my families favorites. AND it is an easy recipe to do when you have a TON of veggies that need to be used up before they go bad!!
You will need:
1 bunch broccoli rabe, rinsed and cut into 2 in. pieces
1# dried pasta of any kind
1 TBS olive oil
1# mild or hot Italian sausage, casings removed
1 medium onion, sliced
3 cloves garlic chopped
1/2 C. chicken broth
1 tsp salt
1/4 tsp black pepper
1/2 C. fresh parsley leaves, rinsed and dried (optional)
1/3 C. grated parmesan cheese
Bring large pot of salted water to a boil. Add broccoli; simmer 5 minutes. Remove broccoli and set aside. Return water to a boil. Cook pasta (yes your water will look green- but you are getting all those nutrients into your noodles!) meanwhile, heat olive oil in skillet over medium heat; cook sausage and onion until sausage is well done; breaking up sausage with wooden spoon. Add garlic and cooked broccoli. cook for 5 min. Add chicken broth, salt, pepper. Bring to a simmer. Add parsley. Remove heat. Drain noodles. Pour sausage mixture over cooked pasta, sprinkle with cheese. enjoy!
** Like I said earlier- I usually add a BUNCH of different veggies in this!! I just add them in the “broccoli” stage. so cook them first all in the pot with the broccoli, and then set aside. I have also cooked them in with the sausage too- either way works great!
I have added bell pepper sweet potato, zucchini, spinach, asparagus, etc.
